Ingredients:
- 500 gr. White flour
- 250 gr. White sugar
- 3 eggs
- 150 gr. Vegetable oil
- Zest of one lemon
1. Mix all dry ingredients into a big bowl. Than add oil and eggs, one by one, and lemon zest.
2. Work the ingredients together with your fingertips, gradually bringing the flour into the centre. Work until the ingredients come together as an elastic dough.
3. To make these biscuits the shape you see in the picture you need to spread always your surface with a bit of flour so that the biscuits dough doesn’t stick and break.
4. Make thin tubes, 18 cm long and as thick as your small finger.
5. Curl the two ends delicately in opposite direction to get the S like shape.
6. Spread biscuits 3 cm away from each other and bake them for 20 minutes at 180°.
7. Cool them down on a tray.
8. These biscuits recipe belongs to my mum’s auntie, born in the late 40’s. She’s been making them since my mum’s was a child, and their particular strength is that they last for long time if kept in a dry sealed box and they are absolutely amazing with moka coffee or in tea. I have rename them ‘Vintage Biscuits’ (the original name was S biscuits) because their taste is very simple but absolutely authentic and very old fashioned.
