Zucchini and Chocolate muffins







One day I was cooking for this gorgeous mum who has three kids between 2 and 7 years old and she asked me how she could find a recipe that would make them eating zucchini, as they were strictly refusing even to taste them.. So I went home and started to look at my recipes books hoping to solve the dilemma.
I needed to find a way to wisely hide the veggies, while attracting the children towards something they would have surely liked. I couldn’t stop thinking of what a great revolution the carrot cake has brought in to the family’s cooking and having a look at this mouth watering picture of Zucchini walnut muffins found in a old American magazine , I had my epiphany: why not using the watery flesh of the zucchini to reduce the (scary) amount of butter usually contained in those type of baked delicacies whilst attracting the kids with chocolate, a largely loved ingredient among them? So the amazing Zucchini and chocolate muffins were born.. They keep moist for ages and contain grape seed oil and apple juice instead of butter, rice milk – so they are also diary free- , organic zucchini and dark chocolate, which make this recipe also Low GI compared to the traditional muffin mixture.

This recipe can be used to make 6 large muffins or a 800 gr bread and it is so easy to make it will bring a little revolution in everybody's baking time!

Ingredients 

170 gr Whole meal flour
125 gr White flour
70 gr Raw sugar
80 gr White sugar
3 eggs
2 medium zucchini grated
150 ml Rice milk
50 ml Apple juice
70 ml Grape seed oil
12 gr baking powder
3 gr bicarbonate soda
100 gr 60% dark chocolate

Mix all the wet ingredients and set aside.
Mix all the dry ingredients and pour the wet ones over them.
Cut the chocolate in chunks and grate the zucchini.
Add them to the mixture and distribute the batter in a 6 large muffins tin or bread tin covered with baking paper.
Bake in a pre heated oven for 1 hour at 180°.
Do the skewer test once or twice as the cooking time may vary according to the type of oven used.
